Champagne Vilmart & Cie 'Coeur de Cuvée' Brut 2015
Before grower-producers were remotely common, Vilmart et Cie was devotedly making wine from its own vines in 1890. Located in the Montagne de Reims, the vines are now tended by the family’s fifth generation. Because the family has a firm foothold in the region, it is privileged to tend some of the finest vineyards. If there is a “house Champagne” of the Napa Valley wine community, this is it. We can’t recount the number of times this has been poured for me by a winemaker, sales manager, or somm, and it’s downright delicious every time. Produced from the parcel the house considers its most exceptional, the wine is rich and giving from 10 months in barrel and 72 months aging in bottle. It remarkably retains loads of mineral expression. Try this newly released 2015 with a few more years in bottle and it won’t disappoint.

Champagne Doyard 'Vendemiaire' Blanc de Blancs Brut NV
Founded in 1927 by Maurice Doyard, son Yannick Doyard took over at the age of 20 years old. Today, Yannick’s son Guillaume is at the helm, farming 25 acres of prime vineyards in Vertus and the Grand Cru villages of Le Mesnil-sur-Oger, Cramant, Oger, Avize and Aÿ.  All of these family plots are in the Côte des Blancs region of Champagne, considered the most exceptional for Chardonnay production. The house keeps yields very low to concentrate the wines, which are vinified in barrel (not the most common technique in the region). From 100% Chardonnay from a combination of 1er and Grand Cru vineyard sites, this wine spends a remarkable 42 months aging in bottle, giving it a remarkable texture and brioche note. Its prominent minerality coupled with this sensation produces a remarkable and deeply pleasing tension.

Champagne H. Billiot Brut Reserve NV
Vintner Laetitia Billiot is the fourth generation to bottle estate Champagnes at this domaine in the Grand Cru Village of Ambonnay. Her great-grandfather Louis Billiot bottled small amounts of wine, but it was his son and Laetitia’s grandfather, Henri, who created the estate today. Laetitia’s father Serge took over in 1954 quickly establishing himself as a top producer, producing a range of wines from his Grand Cru holdings in Ambonnay. Today, Laetitia continues the tradition, working 5 hectares in Ambonnay. Of the 18 parcels that Billiot works, all but one of them are mid slope, in the most desirable sections of this famous village. “The wines of Ambonnay are very vinous, with a lot of strength,” says Laetitia Billiot,“but they are also very fine, with delicacy and finesse.”
