CattleyaAlma de Cattleya Red Blend 2017

Vintner and winemaker Bibiana Pisoni grew up in Colombia and quickly headed off to France to study Enology and completed her research thesis while working at the famed estates of Château Haut-Brion & La Mission Haut-Brion. Her hard work paid off as she had the privilege to work among other family-owned wine producers in Burgundy, Alsace, Cognac and later was whisked around the globe between California, South Africa, and France for several years before deciding to call California her home. In 2012, she created her first label, Cattleya and Alma de Cattleya. Fruit for this 2017 Red Wine is grown in the rolling hillsides and sedimentary soil of Sonoma County. The grapes are harvested at night and immediately sorted at the winery. The fruit is fermented in stainless steel, close-top tanks. There is a short cold soak before the fermentation can begin. When fermentation is complete, the wine is drained from the tank and skins are gently pressed. This wine is aged for eighteen months in French oak barrels, all neutral barrels. Blackcurrant, blackberries and notes of cedar fill the glass with a generous and deep mouthfeel that finishes with succulent flavors of cocoa and graphite.
